Description

Chimay Blue (Chimay Bleue) is a Belgian Trappist strong dark ale, originally brewed as a Christmas ale in 1956. Due to its popularity, it became a permanent part of Chimay’s lineup.

Tasting Notes:

  • Appearance: Deep brown, almost mahogany, with a thick, creamy tan head.
  • Aroma: Rich maltiness with dark fruit (figs, raisins, plums), caramel, toffee, and subtle spice.
  • Taste: Complex flavors of dark chocolate, caramelized sugar, dried fruit, and roasted malt, balanced with spicy yeast and mild hop bitterness.
  • Mouthfeel: Full-bodied, smooth, and slightly warming due to the high alcohol content.
  • Serving Recommendations:

    • Best served at 10-12°C (50-54°F) in a chalice or goblet glass to enhance its aroma and complexity.
    • Food Pairing: Complements aged cheeses (especially Chimay’s own cheeses), roasted meats, and rich desserts like dark chocolate cake.
